Traditional pancakes can be a little on the unhealthy side made with refined wheat, white sugar and served with lashings of butter, ice-cream, syrup, etc

Here are some ways to make your pancakes healthier:
1. Chose an alternative to refined wheat flour – you can use wholemeal buckwheat, kamut, coconut or spelt flour
2. To sweeten – replace white sugar with dark brown muscavado sugar, agave or stevia
3. Add ginger, cardamom, cinnamon & ginger to the pancake mix to increase digestibility
4. Serve with stewed fruit, nut spread (almond, cashew or brazil nut spread), natural yoghurt or agave syrup
5. Use a non-stick pan to avoid having to use extra oil (cast iron is preferential to teflon)
For egg free pancakes use bi-carb, cider vinegar and some corn flour to add fluffiness
